Ginger energy balls

A lovely sweet treat with a hearty hit of ginger spice. No added sugar gives a handy energy boost for night watches or during a hike.

INGREDIENTS

  • 1/2 cup each of raw almonds, cashews, and pitted dates
  • 1 tbsp chia seeds
  • 1-inch piece of fresh ginger – we like a good amount of ginger, but adjust to taste.
  • a pinch of sea salt

PREPARATION

  1. Combine all the ingredients together in a high speed blender or food processor and blend until the mixture starts to form a ball.
  2. Roll into tablespoon sized balls and refrigerate or freeze for later.

Makes about 10 – 12 balls
